Best. Soup. Ever.

I made chicken soup tonight. Tried a few different things.

Best. Soup. Ever.

And I made a little extra broth, so I’ve got some I can use to make stuffing with.

Can’t wait for lunch tomorrow. The soup wasn’t ready until 8:30-ish, so I had something else for dinner. But I tasted it, of course. Man, it’s good.

    Chicken soup for Shabbat is even better than the same soup any other night. Only half way there. I can barely wait.

    It’s just your standard recipe. Chicken, parsnip, carrots, celery, celery leaf, dill, one onion quartered. I’ve been caramelizing the onion to sweeten it, but this time I simply cut it up and put it in.

    I also take the carrots out with the rest of the vegetables after the soups been simmering an hour, then put in new carrots when I put in the matzo balls. It makes them far less mushy and more flavorful. I really like carrots in the soup.

    I think it just worked out perfectly. Sometimes it doesn’t. The last soup wasn’t nearly as good.
